If you use just the 4 cups of broth, the soup will be pretty thick and chunky. Use more broth if you want it to be a little more soupy.
The sun-dried tomatoes can be dry or in oil, doesn’t matter.

Ingredients
- 1 tbsp of avocado oil
- 1 diced onion
- 3 cloves of minced garlic
- 4 cups of chicken broth
- 1 tsp Italian seasoning
- 1/4 tsp of red pepper flakes (optional)
- Salt and pepper to taste
- 16oz potato gnocchi
- 1/2 cup chopped sun-dried tomatoes
- 1 cup heavy cream
- 1 cup Parmesan (grated)
- 3 cups shredded rotisserie chicken
- Handful of spinach
Instructions
- Heat olive oil in soup pot. Toss in diced onion, garlic, and sauté for a few minutes.
- Add in chicken broth, gnocchi, sun-dried tomatoes. Let cook for a 5 minutes.
- On low heat, add in heavy cream, parmesan, chicken, spinach, and Italian seasoning
- Let simmer for a few minutes and serve.
