Peanut-Pumpkin Pupcakes!
Ingredients
Cake:
- 1 cup of flour or substitute with whole wheat flour
- 2/3 cup pure pumpkin puree (do not buy pumpkin pie filling, this has many added sugars.. etc)
- 1 egg
- 1/2 cup tablespoon baking soda
- 1/3 cup all natural peanut butter (the less salts, sugars and additives the better)
- 1/2 cup water
- 1/3 cup olive oil
Frosting:
- 2/3 cup plain Greek yogurt
- 2/3 cup Pumpkin puree
Instructions
Mix together all of the cake ingredients. I chose to create the frosting mix as I was going but, you can mix your frosting whenever you please.
Preheat your oven to 350 degrees and when ready, add your pupcake mix into your bakeware. I used a tiny heart shaped pan for my cake which made about 5 pupcakes. This recipe should allow you to make approx. 6 pupcakes in a normal muffin pan.
Once in the oven, bake for 15 minutes. After 15 minutes, check to see if they are done. If not, put them in for an extra 5 minutes.
Let cool. Add frosting when completely cooled down.
Like I said above, I made approx. 5 pupcakes. Of these 5, I cut the top, uneven parts off of the pupcake, added frosting and added another pupcake. This way I was able to make two 2-tiered cakes with one pupcake to spare.
